Whatever You Want Bircher Muesli

Breakfast is not my favorite meal during the week. Often the best I come up with is sculling down a coffee or a cup of tea – and if I’m lucky, a slice of toast with peanut butter – before I head out the door.

After lamenting about how much I didn’t like the chia pudding, friend and blogger Lazy Girl A recommended this little recipe. I tried it the next day… and the next… and had it everyday for a whole week. And now that I’m time strapped in the mornings with the baby, I’ve revived preparing a batch of dry bircher muesli mix once a week to portion out and soak overnight at the same time I’m preparing dinner. That’s testament to how much tastier I found it compared to just chia pudding.

However there isn’t a whole lot of sweetness to it and I found the portion size double what I needed to feel full. So here’s my version of my Whatever You Want Bircher Muesli, because it can have whatever you want or have in the pantry.

And of course you can adapt the recipe to make toasted granola too! Here’s one I’ve made with rolled oats, pumpkin kernels, shredded coconuts, white chia seeds, dried apricots, coconut oil, maple syrup, allspice and cinnamon.

Toasted Granola

Whatever You Want Bircher Muesli


  • 1/4 cup rolled oats
  • 1 tablespoon shredded coconut
  • 1 tablespoon nuts (sliced almond, chopped walnut/pecan, etc)
  • 1 teaspoon seeds (chia seeds, linseed, sunflower, sesame, poppy, etc)
  • 1/4 cup apple/pear juice or coconut water
  • 2 tablespoon yoghurt (I prefer plain, but if you prefer more tang, go with Greek yoghurt)
  • Small handful of whatever fruit you have (blueberries are my favorite)


  1. Put the dry ingredients into your container and stir/shake it up.
  2. Add the apple/pear juice and stir.
  3. Leave in the fridge overnight.
  4. In the morning, add your fruit and yoghurt to enjoy.
