Brewsvegas’s Kettle & Tin 3rd Annual Chili Cook off

Disclaimer: The SO and I attended the Kettle and Tin 3rd Annual Chilli Cook Off as guests of Ford Digital Agency

Kettle & Tin held its 3rd Annual Chili Cook off and having visited the event last year, we knew to get there early to beat the afternoon heat, and of course, sample the contestants’ entries.

This year’s lineup were super competitive – I loved the trash talking between the teams! They included:

For $10 a person, you get two badges – one to wear to be able to sample any (and how many) chillis you wanted and a drink of Sailor Jerry, CAPI Sparkling, Burleigh Brewing, Batlo Cider, Rocks Brewing Co or Stone & Wood beer. A bargain!

So what did we think?

Cove Bar & Dining’s green prawn curry with fried rice and sliced cucumber

The SO and I LOVED the Cove Bar & Dining‘s green prawn curry, especially with how fresh and juicy that plump prawn was, but couldn’t give them a vote as it was so left-field. Nonetheless, if this was on their menu next time we visit, I would order it in a heartbeat.

Statler & Waldorf’s smoked duck and peanut butter chilli

Statler & Waldorf‘s smoked duck and peanut butter chilli sounded so promising (mmmmm duck), but we found the peanut butter too overwhelming and just screamed satay sauce too much.

Pablo’s chipotle, chocolate and beer dlow-cooked beef with guac and homemade cornbread with a touch of honey

If you didn’t know already, we are HUGE Pablo fans. These guys have never disappointed us and I was particularly excited to see what they would come up with for the Kettle & Tin 3rd Annual Chili Cook off. In fact, these were the first guys we tried and boy! Were they spicy! We loved the heat that smacked you right off the rank and coupled with the little square of sweet cornbread and their sensational guac, this was one of our top picks and the SO tossed them his vote.

Super Whatnot’s Chorizo sausage with pork belly & pork shoulder marinated in Holgate’s Mt Macedon pale ale and served with fresh coriander, spring onions and paprika lime mayonnaise

You needed a little bit of patience to get your hands on Super Whatnot‘s chilli, but they were worth every additional minute. This was another one of our top picks and although the consistency of their chilli was a little more liquid than some of the others, this one was a bombshell of smooth meaty goodness, tempered with the fresh coriander and the mayonnaise.

Anise were the very last team to start serving their chilli, but they assured everyone that they would only serve it when it was ready and it would be worth the wait.

They cooked three whole beef tongues with beef cheeks, so had to pull out the tongues to peel off the skin and chop the firm flesh. If you’re squeamish about offal, particularly tongue, you are missing out BIG time. Tongue is one of those cuts that withstands long cooking times and holds its texture very well – I use them in stews and braises in my winter cooking a lot, so trust me on this one. I felt a little sorry the team had to work quickly with the piping hot organs, but they didn’t disappoint and delivered on their promise.

They also offered an assortment of condiments ranging in heat levels, such as ghost chilli oil and pickled chillis, so anyone could up the spiciness to their liking.

Anise’s Wagyu beef cheek & tongue chilli

Anise took out the prize with their meaty smooth chilli this year and it was very well deserved.
