Rummy apricot loaf – not for the kids

The SO has a very weak spot for dried apricots, so we usually have a large packet of them sitting in our pantry for grazing. But as delicious as they are, I wanted to bring them up a notch. By adding a touch of rum and turning them into a loaf that can be enjoyed by all.

This one is something to be savoured with a generous scoop of vanilla ice-cream or a glass of warmed mullied wine.

Rummy apricot loaf


  • ¾ cup dried apricots, diced
  • ½ cup rum
  • 1 egg
  • 2 tbsp softened butter
  • 1 cup caster sugar
  • 1 cup self-raising flour
  • ½ tsp salt
  • ½ cup milk


  1. Soak the dried apricots in the rum for at least an hour.
  2. Preheat the oven to 160ºC.
  3. Cream the egg, butter and sugar until it is light and fluffy.
  4. Gently mix in the apricots and the rum it has been soaking in.
  5. Sift in the flour, salt and milk. Mix.
  6. Pour into a greased loaf tin and bake for 1 hour.
  7. Allow to cool before removing from the baking tin to serve.
