Cookie month #13: Cinnamon Raisin cookies

This recipe is from Easy Cookies and while it’s a really easy recipe, the resulting cookie is much more cake-like than any of the other recipes. I love a spicier cinnamon flavour, so I usually double the recommended amount of ground cinnamon for the extra flavour kick.

Makes 24 cookies

INGREDIENTS

  • 2 cups brown sugar
  • 1 cup butter
  • 2 eggs
  • 3 cups plain flour
  • 1 tsp ground cinnamon
  • 1¾ teaspoons baking soda
  • ¾ cup milk
  • ¾ cup raisins

DIRECTIONS

  1. Preheat oven to 170°C.

  3. Cream together the sugar and the butter.
  4.  

  5. Mix well then add in the eggs.
  6.  

  7. Combine the flour, cinnamon and soda and then add to the creamed mixture.
  8.  

  9. Stir in the milk and raisins.
  10.  

  11. Drop by spoonfuls onto an ungreased cookie sheet and bake for 10-13 minutes.

  13. Cool and store in airtight container.
