This recipe is from Easy Cookies and while it’s a really easy recipe, the resulting cookie is much more cake-like than any of the other recipes. I love a spicier cinnamon flavour, so I usually double the recommended amount of ground cinnamon for the extra flavour kick.
Makes 24 cookies
INGREDIENTS
- 2 cups brown sugar
- 1 cup butter
- 2 eggs
- 3 cups plain flour
- 1 tsp ground cinnamon
- 1¾ teaspoons baking soda
- ¾ cup milk
- ¾ cup raisins
DIRECTIONS
- Preheat oven to 170°C.
- Cream together the sugar and the butter.
- Mix well then add in the eggs.
- Combine the flour, cinnamon and soda and then add to the creamed mixture.
- Stir in the milk and raisins.
- Drop by spoonfuls onto an ungreased cookie sheet and bake for 10-13 minutes.
- Cool and store in airtight container.
