Cookie month #12: Peanut butter cookies

Darling girlfriend Cat of Peaceful Home Peaceful Heart shares so many of the same passions as I do, it’s no wonder all we do when we are together is cackle about cooking, baking and trying to lead more sustainable wholesome lives with our respective geeky husbands.

After I shared my little cookie month challenge idea with Cat, she was one of the first to share her own recipes for me to try. And this one I love, cuz it’s so easy! Who knew just 3 ingredients could create these cookies in less than 15 mins?

Makes 24 cookies

INGREDIENTS

  • 1 cup crunchy peanut butter
  • 1 cup brown sugar
  • 1 whole egg

DIRECTIONS

  1. Combine all ingredients in a bowl.
  2.  

  3. Make small balls space about 4cm apart on trays and bake in a preheated oven at 180°C for 10 mins or until golden brown.

  5. Take out when browned slightly. Cool on trays.
